Hermits, the traditional early American cookie, are a dark, spicy cookie filled with nuts and fruit.
Time to prepare: 10 minutes
Difficulty: Easy

Ingredients

3/4 cup butter or margarine
1 cup brown sugar, packed
1/2 cup molasses
3 eggs
2 cups all-purpose flour
1 cup whole wheat flour
1 tsp. cinnamon
1/2 tsp. EACH nutmeg and cloves
1/2 tsp. baking soda
1/4 tsp. salt
1/4 cup strong coffee
1/2 cup EACH pecans, walnuts, hazelnuts and almonds
1 cup raisins

Directions

Cream butter, sugar and molasses until light and fluffy. Beat in eggs, one at a time.

In another bowl, combine flours, spices, baking soda and salt.

Beat into butter mixture alternately with the coffee. Stir in nuts and raisins. Pour into lightly buttered 10-by-15-inch baking pan.

Bake at 350 degrees for 20 minutes. Cool. Cut into squares.

A glaze can be spread over the cooled hermits. Mix 3/4 cup powdered sugar, 1/2 tsp. vanilla extract and 1 Tbs. milk or cream.
