| HOME STYLE RUBY CHICKEN SALAD |

Cold salad, especially good on a hot day!
for Main course
6 servings
Ingredients
3 medium Ruby Red grapefruit, chilled
2 cups cooked chicken
2 tsps salt
1/2 cup yogurt
1/4 cup mayonnaise
1/8 to 1/4 tsp dill weed
1/2 cup chopped celery
4 to 5 tbsp chopped green onions
1/4 cup ripe olives
Directions
Cut grapefruite in half crosswise; cut around each section to loosen from membrande. Remove sections from shell and cut into bite-size pieces; drain well. Scrape remaining membrance from shells. Refrigerate until ready to use. In medium bowl, combine yogurt, mayonnaise, 1 tsp salt and dill weed; stir well. Add grapefruit, chicken and remaining ingredients; toss lightly. Spoon about 3/4 cup chicken mixture into each grapefruit shell. Cover and chill until ready to serve.

Use a serrated blade grapefruit knife. It makes the sectioning easier!
