These are simple cookies and contain no egg in the mixture. They turn out crispy and thin.
Time to prepare: 15 minutes
Difficulty: Easy

Ingredients

1 1/2 cups quick rolled oats
1/2 cup all-purpose flour
1/2 cup brown sugar, packed
1/2 cup soft butter or margarine
1/2 tsp. salt
2 Tbs. boiling water
1/2 tsp. baking soda
1/2 cup chopped walnuts, optional
Sugar for tops of cookies

Directions

Combine oats, flour, brown sugar, butter and salt into large mixing bow. Blend until butter is thoroughly worked into mixture.

Stir together water and baking soda. Stir soda mixture into oat mixture. Add nuts, if used, blending well.

Shape into balls the size of walnuts. Flatten with the bottom of a glass dipped in water, then dipped into sugar.

Bake at 375 degrees for 8 minutes until golden and crispy. Cool on racks.
