These cookies bake crisp and delicious, but watch carefully so they do not burn.
Time to prepare: 20 minutes
Difficulty: Easy

Ingredients

1/2 cup butter or margarine, room temperature
1 cup brown sugar, packed
1 egg
1 cup quick-cooking oats
1 cup flaked coconut
1 cup raisins or chopped nuts
1 cup whole wheat flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

Directions

Cream butter and sugar. Add egg, beating until light. Stir in oats, coconut and raisins.

Combine flour with baking powder, baking soda and salt. Stir into creamed mixture.

Drop by teaspoonsful onto lightly greased cookie sheets, allowing 2 to 3 inches between each cookie for spreading.

Bake at 375 degrees for 6 to 8 minutes. Immediately loosen cookies from pan. Cool cookies on wire racks.
