These cookies have crispy edites, soft, chewy centers and are perfect for filling the cookie jar for after-school snacks.

Ingredients

1/2 cup soft butter or margarine
1 cup sugar
1 tsp. vanilla extract
1 egg
1 3/4 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/3 cup milk
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup flaked coconut

Directions

In large mixing bowl, cream butter with sugar and vanilla. Add egg. Beat until light.

Stir together flour, baking powder, salt anad cinnamon. Add to creamed mixture alternately with the milk. Stir until a stiff dough forms.

Blend in raisins, nuts and coconut.

Drop rounded teaspoonsful of dough on lightly greased, shiny cookie sheets.

Bake at 400 degrees for 10 minutes or until cookies are browned around the edges, pale in the center, but firm to the touch.

Comments

For the best browning, bake cookies on rack placed slightly above center of oven. Also, shiny cookie sheets produce the most evenly browned cookies; black or dark sheets will burn cookies on the bottom.
