Foods can be nutritious as well as enjoyable. These easily made crunchy cookies are a case in point.

Time to prepare: 20 minutes
Difficulty: Average

Ingredients

1/2 cup butter or margarine
3/4 cup brown sugar, packed
1 egg
1/2 tsp. vanilla extract
1 cup plus 2 Tbs. all-purpose flour
1/2 cup unprocessed bran
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 cup snipped pitted dates or raisins
1/4 cup sunflower nuts or other chopped nuts
Sliced dates or raisins for tops of cookies

Directions

Cream together butter, sugar, egg and vanilla until well blended.

Mix flour, bran, baking soda, cinnamon and salt. Blend into first mixture (dough will be stiff). Stir in dates and nuts.

Drop by rounded teaspoonsful 2 inches apart on greased baking sheets (cookies will spread some). Top with date slices.

Bake at 375 degrees for 10 to 12 minutes or until browned. Remove to racks to cool. Store airtight.
